Juneteenth marks June 19, 1865, the day Union Army General Gordon Granger arrived in Galveston, Texas and announced that enslaved people there were free — more than two years after the 1863 Emancipation Proclamation had legally freed them.
The Emancipation Proclamation itself, issued January 1, 1863, legally freed enslaved people only in Confederate-held territory still in rebellion; slavery in Texas continued in practice until Union enforcement finally reached it.
Red foods and drinks associated with modern Juneteenth celebrations are often traced to West African culinary traditions carried through the era of slavery.
